Strawberry Cheesecake pancakes

Strawberry Cheesecake Pancakes, light and fluffy pancakes filled with cream cheese, topped with yumlecious homemade strawberry sauce and whipped cream. This is one of our favorite breakfast.

Ingredients for Strawberry Sauce 1 lb fresh strawberries

3 tablespoon sugar

juice of 1 large lemon


Ingredients for Pancakes 2 cups all purpose flour

2 teaspoon baking powder

2 tablespoon sugar

1/2 tsp salt

1 1/2 cups milk

2 eggs

8 oz softened cream cheese


Method: In a medium size plan add strawberries, sugar and lemon juice. Mash strawberries with potato masher and cook over medium flame for approximately 15-20 minutes till strawberries cook and thicken to a smooth sauce.  Set aside and keep warm. 


In a bowl add all purpose flour, baking powder, salt, and sugar. In another bowl, whisk together eggs and milk, add softened cream cheese and gently blend. Add the wet mixture to the dry mixture, stir until well combined. 

Preheat a nonstick pan. Pour 1/2 cup batter in the hot pan. Once the edges are dry and bubbles appear on top of the pancakes, flip it over. Cook for approximately 2 minutes

Serve with warm strawberry sauce and whipped cream.
