Baked Pancakes

Pancakes have always been one of my daughter's all time favorite breakfast. I love to experiment and must say it was brilliant and whole lot easier baking these yummy super moist pancakes ! . Baking a simple buttermilk pancake batter in the oven is brilliant! My Naomi loved it, am sure you too will. Sure to be a super hit with kids. I used chocolate chips for the toppings you could used fresh or frozen fruits of your choice. Do try out this no fail recipe. Like, share would surely love to hear from you.


Ingredients:-

1 1/4 cups buttermilk

4 tablespoons melted butter

1 large egg

1 tablespoon brown sugar

3/4 cup whole wheat flour

3/4 cup all purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

salt as required

Toppings:

1/2 cup Chocolate chips

Fresh or frozen fruit of your choice


Directions:

Preheat the oven to 375 degrees F. Spray muffin pan with cooking spray.

In a medium bowl, whisk together the buttermilk, egg and butter, add all purpose and whole wheat flours, sugar, baking powder, baking soda, and salt. Whisk until well combined.

To the already sprayed muffin pan evenly spread the batter, it should be a thin layer. Top with chocolate chips or fresh, frozen fruits. Bake for 15 to 20 minutes until puffy and lightly golden on the edges. Serve warm or at room temperature with butter or syrup of your choice. For this recipe I used chocolate chips for toppings.
