Seekh Kebab


Seekh kebab means kebab on a skewer, made with ground meat mixed with few spices and formed into cylinders on skewers. Traditionally seekh kebabs are made on a barbecue grill or in a tandoor over coals, which adds more color and flavor to the kebabs. Not everyone owns a grill or tandoor at home. Here's a simple way of making these yumlecious kebabs at home, you can bake them or use a frying pan and they taste as amazing as the restaurant ones.

Ingredients:-

500 Grams Ground Meat (Beef/Mutton/Chicken) 70% Lean, 30% Fat)

2/3 Jalapenos finely chopped

1 small bunch cilantro finely chopped

1 Medium Onion finely chopped

1 tbsp Ginger/Garlic paste

1 tsp Salt

1/2 tsp Black Pepper

1/2 tsp Chili Flakes

1/2 tsp Paprika

1/2 tsp Garam masala powder

1/2tsp Cumin powder

1/2 tsp Coriander powder

Directions:-

To the ground beef add chopped jalapeno, cilantro, chopped onion, garlic-ginger paste, salt, pepper, chili flakes, paprika, garam masala powder, cumin powder and coriander powder. Mix everything using your hand until well incorporated. Cover and refrigerate the mixture for at least 1-2 hours to marinate.

To form the kebabs, first wet your palms with water so the mixture won’t stick to your hand, then scoop out a medium size ball of the meat mixture and pierce it through a wooden skewer, then spread the meat on the skewer with your hand. Starting from the top push down on the meat, press your middle finger in a diagonal angle down the skewer to make the desired shape. Heat frying pan over medium heat, then brush the pan with a little butter or cooking oil.

Add the kebabs to the pan and cook, do not overcrowd 4/5 kebabs depending on the size of the pan. Flip kababs to brown all around approx 3-4 minutes on each side. You can brush the kababs with a little butter.

Serve these yumlecious kebabs with raita, tamarind chutney, salad, naan/paratha.

This recipe makes 8-10 medium size kebabs.
